Ingredients
  

Salad Base
  • 4 cups watermelon cubed, seedless
  • 2 cups cucumber diced
  • 1 cup feta cheese crumbled
Dressing
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon honey optional
  • 1 pinch salt to taste
  • 1 pinch black pepper to taste
Garnish
  • 1 tablespoon fresh mint chopped

Method
 

Prepare the Ingredients
  1. In a large mixing bowl, combine the cubed watermelon and diced cucumber.
  2. Add the crumbled feta cheese to the bowl.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, lime juice, honey, salt, and black pepper.
Combine and Serve
  1. Pour the dressing over the salad and gently toss to combine.
  2. Garnish with chopped fresh mint before serving.
