Preparation
- Preheat the oven to 350°F (175°C).
- In a large pot, boil the cubed potatoes in salted water until tender, about 15-20 minutes. Drain and return to the pot.
- Mash the potatoes with a potato masher until smooth.
- Stir in the sour cream, milk, garlic powder, onion powder, salt, and pepper until well combined.
- Fold in the diced ham and shredded cheddar cheese.
Baking
- Transfer the potato mixture to a greased baking dish and spread evenly.
- Top with additional shredded cheddar cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool for a few minutes before serving. Garnish with chopped chives.
