Twice Baked Potato Casserole with Ham + VIDEO

Ingredients
  

Potatoes
  • 4 large russet potatoes peeled and cubed
Dairy
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese plus extra for topping
  • 1 cup milk whole or 2%
Meat
  • 1 cup diced ham cooked
Seasonings
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 2 tablespoons chives chopped, for garnish

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large pot, boil the cubed potatoes in salted water until tender, about 15-20 minutes. Drain and return to the pot.
  3. Mash the potatoes with a potato masher until smooth.
  4. Stir in the sour cream, milk, garlic powder, onion powder, salt, and pepper until well combined.
  5. Fold in the diced ham and shredded cheddar cheese.
Baking
  1. Transfer the potato mixture to a greased baking dish and spread evenly.
  2. Top with additional shredded cheddar cheese.
  3. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  4. Remove from the oven and let cool for a few minutes before serving. Garnish with chopped chives.

Notes
