Ingredients
  

Vegetables
  • 4 medium tomatoes diced
  • 2 medium cucumbers sliced
  • 1 small red onion finely chopped
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
Garnish
  • 1 tablespoon fresh parsley chopped

Method
 

Prepare the Vegetables
  1. Dice the tomatoes and slice the cucumbers. Finely chop the red onion.
Make the Dressing
  1. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and black pepper.
Combine and Serve
  1. In a large mixing bowl, combine the diced tomatoes, sliced cucumbers, and chopped onion. Pour the dressing over the salad and toss gently to combine.
  2. Garnish with chopped fresh parsley before serving.
