Ingredients
  

Chicken
  • 4 pieces boneless, skinless chicken thighs
Potatoes
  • 1.5 pounds baby potatoes halved
Garlic Butter Sauce
  • 1 stick unsalted butter melted
  • 6 cloves garlic minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
Garnish
  • 2 tablespoons fresh parsley chopped

Method
 

Preparation
  1. In a bowl, mix melted butter, minced garlic, thyme, rosemary, salt, and pepper.
  2. Place the halved baby potatoes at the bottom of the slow cooker.
  3. Add the chicken thighs on top of the potatoes.
  4. Pour the garlic butter mixture over the chicken and potatoes.
Cooking
  1. Cover and cook on low for 6 hours or high for 3 hours, until the chicken is cooked through and tender.
  2. Once cooked, shred the chicken if desired and mix with the potatoes.
Serving
  1. Garnish with chopped fresh parsley before serving.
