Preparation
- In a bowl, mix melted butter, minced garlic, thyme, rosemary, salt, and pepper.
- Place the halved baby potatoes at the bottom of the slow cooker.
- Add the chicken thighs on top of the potatoes.
- Pour the garlic butter mixture over the chicken and potatoes.
Cooking
- Cover and cook on low for 6 hours or high for 3 hours, until the chicken is cooked through and tender.
- Once cooked, shred the chicken if desired and mix with the potatoes.
Serving
- Garnish with chopped fresh parsley before serving.
