Ingredients
  

Chicken Thighs
  • 4 pieces bone-in, skin-on chicken thighs
Seasoning
  • 2 tablespoons olive oil for coating
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
Vegetables
  • 2 cups mixed vegetables such as carrots, bell peppers, and zucchini

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. In a mixing bowl, combine olive oil, salt, black pepper, garlic powder, paprika, and thyme.
  3. Pat the chicken thighs dry with paper towels and coat them with the seasoning mixture.
  4. Place the seasoned chicken thighs on a baking sheet, skin side up.
  5. Arrange the mixed vegetables around the chicken on the baking sheet.
Cooking
  1. Roast in the preheated oven for 35-45 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the skin is crispy.
  2. Remove from the oven and let rest for 5 minutes before serving.
