Ingredients
  

Chicken and Rice
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 1 cup long-grain white rice rinsed
  • 2 cups chicken broth low sodium
  • 1 cup black beans drained and rinsed
  • 1 cup corn frozen or canned
  • 1 cup queso cheese shredded
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste

Method
 

Cook the Chicken
  1. In a large skillet, heat olive oil over medium heat. Add the chicken pieces and season with cumin, paprika, salt, and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes.
Add Rice and Broth
  1. Stir in the rice, chicken broth, black beans, and corn. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes or until the rice is cooked and the liquid is absorbed.
Add Queso
  1. Remove the skillet from heat and stir in the queso cheese until melted and creamy. Adjust seasoning if necessary.
Serve
  1. Serve warm, garnished with fresh cilantro if desired.
