Ingredients
  

Pasta
  • 8 oz Elbow Macaroni or any pasta of choice
Cheese Sauce
  • 2 tbsp Butter unsalted
  • 2 tbsp All-Purpose Flour
  • 2 cups Milk whole or 2%
  • 1 cup Pumpkin Puree canned or homemade
  • 1 cup Cheddar Cheese shredded
  • 1 cup Gruyere Cheese shredded
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Salt to taste
  • 1 tsp Black Pepper to taste
  • 1 cup Breadcrumbs for topping

Method
 

Cook the Pasta
  1. In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.
Make the Cheese Sauce
  1. In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes until golden.
  2. Gradually whisk in the milk, stirring constantly until the mixture thickens.
  3. Stir in the pumpkin puree, cheddar cheese, gruyere cheese, garlic powder, onion powder, salt, and pepper until the cheese is melted and the sauce is smooth.
Combine and Bake
  1. Preheat the oven to 350°F (175°C). In a large bowl, combine the cooked pasta and cheese sauce, mixing well.
  2. Transfer the mixture to a baking dish and sprinkle breadcrumbs on top.
  3. Bake for 20 minutes or until the top is golden and bubbly.
