Method
Cook the Pasta
- In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.
Make the Cheese Sauce
- In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes until golden.
- Gradually whisk in the milk, stirring constantly until the mixture thickens.
- Stir in the pumpkin puree, cheddar cheese, gruyere cheese, garlic powder, onion powder, salt, and pepper until the cheese is melted and the sauce is smooth.
Combine and Bake
- Preheat the oven to 350°F (175°C). In a large bowl, combine the cooked pasta and cheese sauce, mixing well.
- Transfer the mixture to a baking dish and sprinkle breadcrumbs on top.
- Bake for 20 minutes or until the top is golden and bubbly.
