Method
 

Prep the Potatoes
  1. Preheat your oven to 425°F (220°C). Scrub the potatoes under running water, dry them, and chop into 1 to 1.5 inch chunks.
Add Flavor with Seasoning
  1. In a mixing bowl, toss potato chunks with olive oil, salt, and black pepper. Add fresh herbs if desired.
Arrange for Roasting
  1. Line a baking sheet with parchment paper and spread the seasoned potatoes in a single layer. Roast in the oven for 25 minutes.
Check and Flip
  1. After 25 minutes, flip the potatoes to ensure even browning and roast for another 15 to 20 minutes until fork-tender and golden brown.
Finish and Serve
  1. Remove from the oven and serve hot as a side dish or snack.
