Wet Ingredients
  • 0.75 cups extra virgin olive oil
  • 3 large eggs
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 lemon zest

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease the cake pan.
  2. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the olive oil, eggs, buttermilk, vanilla extract, and lemon zest.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
Baking
  1. Pour the batter into the prepared cake pan and smooth the top.
  2. Bake in the preheated oven for 30 minutes, or until a toothpick inserted in the center comes out clean.
  3. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
