- Preheat your oven to 375°F (190°C).
- Prepare the mini bell peppers by cutting the tops off and removing the seeds.
- Mix together the feta cheese, cream cheese, olives, sun-dried tomatoes, parsley, garlic powder, and black pepper in a bowl until well combined.
- Stuff the bell peppers generously with the cheese mixture.
- Place the stuffed peppers in a baking dish and bake for 20 minutes or until the peppers are tender and slightly golden.
