mini quiches in muffin tin

Delicious mini quiches made in a muffin tin, perfect for breakfast or brunch.

Ingredients
  

Egg Mixture
  • 6 large eggs
  • 1 cup milk whole or 2%
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Fillings
  • 1 cup shredded cheese cheddar or your choice
  • 1 cup diced vegetables bell peppers, spinach, or onions
  • 1 cup cooked meat bacon, ham, or sausage (optional)

Method
 

Prepare the Oven and Muffin Tin
  1. Preheat the oven to 375°F (190°C). Grease a muffin tin with cooking spray or oil.
Make the Egg Mixture
  1. In a mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
Assemble the Quiches
  1. Evenly distribute the diced vegetables, cooked meat, and shredded cheese into each muffin cup.
  2. Pour the egg mixture over the fillings in each muffin cup, filling them about 3/4 full.
Bake the Quiches
  1. Bake in the preheated oven for 18-20 minutes or until the egg is set and the tops are golden.
  2. Allow to cool for a few minutes before removing from the muffin tin.
Serve
  1. Serve warm, and enjoy your mini quiches!
