Method
Prepare the Potatoes
- Wash the potatoes thoroughly under running water and scrub the skin with a brush.
- Prick each potato several times with a fork to allow steam to escape during cooking.
Microwave Cooking
- Place the potatoes on a microwave-safe plate and cover them with a damp paper towel.
- Microwave on high for 5 minutes, then turn the potatoes over and microwave for an additional 5 minutes.
- Check for doneness by inserting a fork; if it goes in easily, the potatoes are done. If not, microwave in 1-minute increments until tender.
Serve
- Carefully remove the plate from the microwave (it will be hot).
- Let the potatoes cool for a minute, then slice them open and fluff the insides with a fork.
- Add your favorite toppings and enjoy!
