mango sticky rice recipe

A delicious Thai dessert made with sweet sticky rice, fresh mango, and a rich coconut sauce.

Ingredients
  

Sticky Rice
  • 1 cup glutinous rice soaked in water for at least 4 hours or overnight
Coconut Sauce
  • 1 cup coconut milk preferably unsweetened
  • 1 4 cup sugar
  • 1 2 teaspoon salt
Mango
  • 2 ripe mangoes peeled and sliced
Toppings
  • 1 tablespoon sesame seeds toasted
  • 1 tablespoon coconut flakes toasted

Method
 

Prepare Sticky Rice
  1. Rinse the soaked glutinous rice under cold water until the water runs clear. Drain well.
  2. Place the rice in a steamer lined with cheesecloth and steam for about 25-30 minutes, or until tender.
Make Coconut Sauce
  1. In a saucepan, combine the coconut milk, sugar, and salt. Heat over medium heat until the sugar dissolves, but do not boil.
  2. Reserve about 1/4 cup of the coconut sauce for drizzling later.
Combine Rice and Sauce
  1. Once the rice is cooked, transfer it to a mixing bowl and pour the remaining coconut sauce over it. Mix well and let it sit for about 15 minutes to absorb the flavors.
Serve
  1. To serve, place a portion of the sticky rice on a plate, top with sliced mango, and drizzle with reserved coconut sauce. Sprinkle with toasted sesame seeds and coconut flakes.
