Ingredients
  

Pasta
  • 2 cups elbow macaroni uncooked
Vegetables
  • 1 cup celery diced
  • 1 cup red bell pepper diced
  • 1 cup green onions sliced
Eggs
  • 4 large hard-boiled eggs chopped
Dressing
  • 1 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste

Method
 

Prepare the Pasta
  1. Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and rinse under cold water to cool.
Mix the Ingredients
  1. In a large mixing bowl, combine the cooled macaroni, diced celery, red bell pepper, sliced green onions, and chopped hard-boiled eggs.
Prepare the Dressing
  1. In a separate bowl, whisk together the mayonnaise, apple cider vinegar, Dijon mustard, salt, and black pepper until smooth.
Combine and Serve
  1. Pour the dressing over the macaroni mixture and stir until everything is evenly coated. Chill in the refrigerator for at least 30 minutes before serving.
