Ingredients
  

Chicken
  • 4 pieces boneless, skinless chicken breasts
Vegetables
  • 4 medium potatoes, diced Yukon Gold or Russet
  • 2 medium carrots, sliced
  • 1 medium onion, chopped
Sauce
  • 1 cup chicken broth low sodium
  • 1 can diced tomatoes 14.5 oz, with juices
  • 2 tablespoons Italian seasoning
  • 3 cloves garlic, minced
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste

Method
 

Preparation
  1. Place the diced potatoes, sliced carrots, and chopped onion at the bottom of the crockpot.
  2. Season the chicken breasts with salt, pepper, and Italian seasoning, then place them on top of the vegetables.
  3. Pour the chicken broth and diced tomatoes over the chicken and vegetables.
  4. Add minced garlic on top.
Cooking
  1. Cover and cook on low for 6 hours or on high for 3 hours, until the chicken is cooked through and the vegetables are tender.
  2. Once cooked, shred the chicken with two forks and stir it back into the mixture.
Serving
  1. Serve hot, garnished with fresh parsley if desired.
