Preparation
- Place the diced potatoes, sliced carrots, and chopped onion at the bottom of the crockpot.
- Season the chicken breasts with salt, pepper, and Italian seasoning, then place them on top of the vegetables.
- Pour the chicken broth and diced tomatoes over the chicken and vegetables.
- Add minced garlic on top.
Cooking
- Cover and cook on low for 6 hours or on high for 3 hours, until the chicken is cooked through and the vegetables are tender.
- Once cooked, shred the chicken with two forks and stir it back into the mixture.
Serving
- Serve hot, garnished with fresh parsley if desired.
