Baking
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Combine in a bowl: 1 cup of all-purpose flour, 1/3 cup of cocoa powder, 1 teaspoon of baking powder, and 1/4 teaspoon of salt.
- Whisk together in another bowl: 3 large eggs and 1 cup of granulated sugar until pale and thick, about 3-4 minutes.
- Fold the dry ingredients into the egg mixture gently until just combined.
- Spread the batter evenly onto the prepared baking sheet.
- Bake for 15 minutes, or until the cake is set and springs back when touched lightly.
- Cool the cake completely on a wire rack after removing it from the oven.
Filling and Rolling
- Whip 1 cup of heavy cream with 2 tablespoons of powdered sugar until fluffy and soft peaks form.
- Spread the whipped cream generously over the cooled cake, leaving a small border around the edges.
- Roll the cake up tightly from one end, creating a lovely log shape.
- Frost the rolled cake with chocolate ganache, smoothing it out with a spatula.
- Finish with marzipan mushrooms and decorations for a festive touch.
