Method
 

Making the Macarons
  1. Preheat your oven to 300°F (150°C) and line two baking sheets with parchment paper.
  2. Sift together 1 cup of powdered sugar and 1/2 cup of almond flour into a bowl.
  3. Whip the 2 large egg whites until soft peaks begin to form, about 2-3 minutes.
  4. Gradually add 1/4 cup of granulated sugar and 1/4 teaspoon of cream of tartar, whipping until stiff peaks form.
  5. Fold the dry ingredients into the meringue mixture gently.
  6. Add food coloring until you get the desired hue.
  7. Transfer the mixture to a piping bag and pipe small rounds onto the prepared baking sheets.
  8. Let the piped macaron shells rest at room temperature for about 30 minutes.
  9. Bake in the preheated oven for 20 minutes.
  10. Cool the shells on the baking sheets for a few minutes before transferring to a wire rack.
