Making the Macarons
- Preheat your oven to 300°F (150°C) and line two baking sheets with parchment paper.
- Sift together 1 cup of powdered sugar and 1/2 cup of almond flour into a bowl.
- Whip the 2 large egg whites until soft peaks begin to form, about 2-3 minutes.
- Gradually add 1/4 cup of granulated sugar and 1/4 teaspoon of cream of tartar, whipping until stiff peaks form.
- Fold the dry ingredients into the meringue mixture gently.
- Add food coloring until you get the desired hue.
- Transfer the mixture to a piping bag and pipe small rounds onto the prepared baking sheets.
- Let the piped macaron shells rest at room temperature for about 30 minutes.
- Bake in the preheated oven for 20 minutes.
- Cool the shells on the baking sheets for a few minutes before transferring to a wire rack.
