Method
 

Baking Instructions
  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened unsalted butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In another bowl, mix together the all-purpose flour, cocoa powder, baking soda, and salt.
  5. Blend the dry mixture into the wet ingredients gradually until fully incorporated.
  6. Fold in the chocolate chips and peppermint extract gently.
  7. Drop rounded tablespoons of dough onto ungreased baking sheets, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes or until the edges are set but the centers are slightly soft.
  9. Cool the cookies on the baking sheet for a few minutes before transferring them to wire racks.
