Method
Prepare the Whipped Cream
- In a mixing bowl, combine the chilled heavy cream, powdered sugar, and vanilla extract. Whip until soft peaks form.
Layer the Cake
- Spread a layer of whipped cream on the bottom of the loaf pan.
- Place a layer of chocolate wafer cookies over the whipped cream, followed by another layer of whipped cream.
- Repeat the layers until all ingredients are used, finishing with a layer of whipped cream on top.
- Garnish with fresh berries.
Chill the Cake
- Cover the loaf pan with plastic wrap and refrigerate for at least 4 hours or overnight to allow the flavors to meld.
Serve
- Once chilled, slice the icebox cake and serve with additional berries if desired.
