Ingredients
  

Cake Layers
  • 2 cups heavy cream chilled
  • 1 cup powdered sugar adjust to taste
  • 1 teaspoon vanilla extract
  • 24 pieces chocolate wafer cookies or graham crackers
  • 1 cup fresh berries for layering and garnish

Method
 

Prepare the Whipped Cream
  1. In a mixing bowl, combine the chilled heavy cream, powdered sugar, and vanilla extract. Whip until soft peaks form.
Layer the Cake
  1. Spread a layer of whipped cream on the bottom of the loaf pan.
  2. Place a layer of chocolate wafer cookies over the whipped cream, followed by another layer of whipped cream.
  3. Repeat the layers until all ingredients are used, finishing with a layer of whipped cream on top.
  4. Garnish with fresh berries.
Chill the Cake
  1. Cover the loaf pan with plastic wrap and refrigerate for at least 4 hours or overnight to allow the flavors to meld.
Serve
  1. Once chilled, slice the icebox cake and serve with additional berries if desired.
