honey bbq chicken rice

Ingredients
  

Chicken
  • 4 pieces boneless, skinless chicken breasts
Honey BBQ Sauce
  • 1 cup honey
  • 1 cup BBQ sauce your favorite brand
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
Rice
  • 2 cups white rice uncooked
  • 4 cups water
  • 1 teaspoon salt
Garnish
  • 2 tablespoons chopped green onions for serving
  • 1 tablespoon sesame seeds for serving

Method
 

Prepare the Rice
  1. In a saucepan, bring 4 cups of water to a boil. Add the rice and salt, reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender and water is absorbed.
Make the Honey BBQ Sauce
  1. In a mixing bowl, combine honey, BBQ sauce, apple cider vinegar, smoked paprika, garlic powder, and onion powder. Mix well until smooth.
Grill the Chicken
  1. Preheat the grill to medium-high heat. Brush the chicken breasts with the honey BBQ sauce and grill for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
Serve
  1. Once the chicken is cooked, let it rest for a few minutes before slicing. Serve over rice and drizzle with additional honey BBQ sauce. Garnish with chopped green onions and sesame seeds.
