honey bbq chicken rice

Ingredients
  

For the Chicken
  • 4 pieces chicken breasts boneless, skinless
  • 1 cup honey BBQ sauce store-bought or homemade
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
For the Rice
  • 2 cups white rice uncooked
  • 4 cups water
  • 1 tablespoon butter optional
  • 1 teaspoon salt
For Garnish
  • 2 tablespoons chopped green onions optional
  • 1 tablespoon sesame seeds optional

Method
 

Prepare the Chicken
  1. In a mixing bowl, combine honey BBQ sauce, garlic powder, onion powder, salt, and black pepper. Mix well.
  2. Add the chicken breasts to the bowl and coat them evenly with the sauce. Let marinate for at least 15 minutes.
Cook the Chicken
  1. Preheat the grill to medium-high heat. Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
  2. Remove the chicken from the grill and let it rest for a few minutes before slicing.
Prepare the Rice
  1. In a saucepan, bring 4 cups of water to a boil. Add the rice and salt, stir, and reduce heat to low.
  2. Cover and simmer for about 18-20 minutes, or until the rice is cooked and water is absorbed. Fluff with a fork and stir in butter if desired.
Serve
  1. Slice the grilled chicken and serve it over a bed of rice. Drizzle with additional honey BBQ sauce if desired.
  2. Garnish with chopped green onions and sesame seeds before serving.

Notes
