Ingredients
  

Salad Base
  • 2 cups corn kernels fresh or canned
  • 1 cup cherry tomatoes halved
  • 1 cup green bell pepper diced
  • 1 cup red onion finely chopped
  • 1 cup Fritos corn chips crushed
Dressing
  • 1 cup mayonnaise
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon chili powder
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine corn, cherry tomatoes, green bell pepper, and red onion.
  2. In a separate bowl, whisk together mayonnaise, lime juice, chili powder, salt, and black pepper.
  3. Pour the dressing over the salad ingredients and mix well to combine.
  4. Gently fold in the crushed Fritos just before serving.
