Ingredients
  

Tomatoes
  • 4 medium green tomatoes sliced into 1/4 inch thick rounds
Breading
  • 1 cup cornmeal for coating
  • 1 cup all-purpose flour for coating
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
  • 1 teaspoon paprika for flavor
Wet Ingredients
  • 2 large eggs beaten
  • 1 cup buttermilk for dipping
Frying
  • 1 cup vegetable oil for frying

Method
 

Prepare the Tomatoes
  1. Slice the green tomatoes into 1/4 inch thick rounds and set aside.
Set Up Breading Station
  1. In one bowl, combine the cornmeal, flour, salt, black pepper, and paprika.
  2. In another bowl, whisk together the eggs and buttermilk.
Bread the Tomatoes
  1. Dip each tomato slice first into the egg mixture, then into the cornmeal mixture, ensuring they are well coated.
Fry the Tomatoes
  1. Heat the vegetable oil in a cast iron skillet over medium heat.
  2. Once hot, carefully add the breaded tomato slices in batches, frying for about 3-4 minutes on each side or until golden brown.
Drain and Serve
  1. Remove the fried tomatoes and place them on paper towels to drain excess oil. Serve hot.
