- Preheat the oven to 375°F (190°C). Lightly grease the madeleine pans or use a silicone mold.
- Combine flour, baking powder, and salt in a mixing bowl. Whisk together thoroughly.
- In a separate bowl, whisk the melted butter and granulated sugar until smooth and creamy.
- Add the eggs one at a time, mixing well after each addition until combined.
- Stir in the vanilla extract and lemon zest.
- Gradually mix the dry ingredients into the wet ingredients, gently folding until just combined.
- Spoon the batter into the prepared madeleine pans, filling each mold about 3/4 full.
- Bake for 12 minutes or until edges are golden and centers spring back when lightly touched.
- Cool slightly in pans before gently removing them and allowing to cool completely on a wire rack.
