Method
 

  1. Preheat the oven to 375°F (190°C). Lightly grease the madeleine pans or use a silicone mold.
  2. Combine flour, baking powder, and salt in a mixing bowl. Whisk together thoroughly.
  3. In a separate bowl, whisk the melted butter and granulated sugar until smooth and creamy.
  4. Add the eggs one at a time, mixing well after each addition until combined.
  5. Stir in the vanilla extract and lemon zest.
  6. Gradually mix the dry ingredients into the wet ingredients, gently folding until just combined.
  7. Spoon the batter into the prepared madeleine pans, filling each mold about 3/4 full.
  8. Bake for 12 minutes or until edges are golden and centers spring back when lightly touched.
  9. Cool slightly in pans before gently removing them and allowing to cool completely on a wire rack.
