  • 1 lb Italian sausage sliced or crumbled
  • 4 medium potatoes diced
  • 1 cup onion chopped
  • 3 cloves garlic minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup spinach fresh, chopped
  • 1 tsp Italian seasoning
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste

Method
 

Cooking in Instant Pot
  1. Set the Instant Pot to 'Sauté' mode. Add the sausage and cook until browned, about 5 minutes.
  2. Add the onion and garlic, and sauté for another 2-3 minutes until softened.
  3. Add the diced potatoes, chicken broth, Italian seasoning, salt, and pepper. Stir to combine.
  4. Close the lid, set the valve to sealing, and cook on high pressure for 8 minutes.
  5. Once done, quick release the pressure. Stir in the heavy cream and spinach until combined and heated through.
Cooking in Skillet
  1. In a large skillet, brown the sausage over medium heat for about 5 minutes.
  2. Add the onion and garlic, cooking for another 2-3 minutes until softened.
  3. Stir in the diced potatoes, chicken broth, Italian seasoning, salt, and pepper. Cover and cook for 15-20 minutes, stirring occasionally, until potatoes are tender.
  4. Reduce heat to low, stir in the heavy cream and spinach, cooking until heated through.
