Method
Prepare the Beans
- Drain and rinse the soaked pinto beans. Set aside.
Cook the Bacon
- In a large pot, cook the chopped bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the pot.
Sauté Vegetables
- In the same pot, add the chopped onion and cook until translucent, about 5 minutes. Add minced garlic and cook for an additional minute.
Combine Ingredients
- Add the soaked beans, ground beef (if using), chili powder, cumin, smoked paprika, water, barbecue sauce, and brown sugar to the pot. Stir well.
Cook the Beans
- Bring the mixture to a boil, then reduce heat to low. Cover and simmer for about 60 minutes, or until the beans are tender.
Finish and Serve
- Stir in the cooked bacon before serving. Adjust seasoning if necessary. Serve warm.
