How to Make Cottage Cheese Pasta Sauce
  1. Cook the Pasta: Start by boiling salted water in a pot and add your choice of pasta. Cook according to package instructions until al dente, usually around 8-10 minutes. Remember to save some pasta water for later!
  2. Sauté Garlic: In a skillet over medium heat, pour in the olive oil and add the minced garlic. Sauté until the garlic is fragrant, about 1-2 minutes. Keep an eye on it to prevent burning!
  3. Blend the Sauce: In a blender or food processor, combine the cottage cheese, sautéed garlic, grated Parmesan, fresh basil leaves, and a sprinkle of salt. Blend until smooth and creamy.
  4. Combine Pasta and Sauce: Drain your cooked pasta and add it to the skillet with the garlic oil. Pour in the blended cottage cheese sauce and mix well until the pasta is thoroughly coated.
  5. Adjust Consistency: If the sauce seems too thick, gradually add the reserved pasta water a tablespoon at a time until it reaches your desired consistency.
