How to Make Cottage Cheese Pasta Sauce
- Cook the Pasta: Start by boiling salted water in a pot and add your choice of pasta. Cook according to package instructions until al dente, usually around 8-10 minutes. Remember to save some pasta water for later!
- Sauté Garlic: In a skillet over medium heat, pour in the olive oil and add the minced garlic. Sauté until the garlic is fragrant, about 1-2 minutes. Keep an eye on it to prevent burning!
- Blend the Sauce: In a blender or food processor, combine the cottage cheese, sautéed garlic, grated Parmesan, fresh basil leaves, and a sprinkle of salt. Blend until smooth and creamy.
- Combine Pasta and Sauce: Drain your cooked pasta and add it to the skillet with the garlic oil. Pour in the blended cottage cheese sauce and mix well until the pasta is thoroughly coated.
- Adjust Consistency: If the sauce seems too thick, gradually add the reserved pasta water a tablespoon at a time until it reaches your desired consistency.
- Serve and Garnish: Serve your Cottage Cheese Pasta Sauce hot, garnished with additional fresh basil and a sprinkle of Parmesan for that extra touch of flavor!
