Prepare the Pancake Batter
- In a mixing bowl, whisk together the flour, sugar, and baking powder.
- In another bowl, mix the milk, egg, melted butter, and vanilla extract.
- Combine the wet ingredients with the dry ingredients and stir until just combined.
Make the Cinnamon Filling
- In a small bowl, mix together the softened butter, cinnamon, and brown sugar until well combined.
Cook the Pancakes
- Preheat a skillet or griddle over medium heat and lightly grease it.
- Pour about 1/4 cup of pancake batter onto the skillet.
- Using a spoon, swirl a small amount of the cinnamon filling on top of the pancake batter.
- Cook until bubbles form on the surface, then flip and cook until golden brown.
Prepare the Cream Cheese Frosting
- In a mixing bowl, beat together the softened cream cheese, powdered sugar, milk, and vanilla extract until smooth.
Serve
- Stack the pancakes on a plate, drizzle with cream cheese frosting, and serve warm.
