Method
Make the Pancake Batter
- In a mixing bowl, whisk together flour, sugar, and baking powder.
- In another bowl, mix milk, egg, melted butter, and vanilla extract.
- Combine the wet and dry ingredients until just mixed; do not overmix.
Prepare the Cinnamon Filling
- In a small bowl, mix together softened butter, brown sugar, and cinnamon until well combined.
Cook the Pancakes
- Preheat a skillet or griddle over medium heat and lightly grease it.
- Pour about 1/4 cup of pancake batter onto the skillet.
- Using a piping bag or squeeze bottle, swirl the cinnamon filling on top of the pancake batter.
- Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
Make the Cream Cheese Icing
- In a mixing bowl, beat together softened cream cheese, powdered sugar, milk, and vanilla until smooth.
Serve
- Stack pancakes on a plate, drizzle with cream cheese icing, and serve warm.
