Ingredients
  

For the Chicken Marinade
  • 1 lb boneless, skinless chicken breasts sliced into strips
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice freshly squeezed
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
For the Fajitas
  • 1 medium bell pepper sliced (any color)
  • 1 medium onion sliced
  • 8 small flour tortillas for serving
  • 1 cup sour cream for serving
  • 1 cup shredded cheese for serving
  • 1 cup guacamole for serving

Method
 

Marinate the Chicken
  1. In a mixing bowl, combine olive oil, lime juice, chili powder, cumin, garlic powder, salt, and black pepper. Add the sliced chicken and toss to coat. Marinate for at least 15 minutes.
Cook the Chicken and Vegetables
  1. Heat a skillet over medium-high heat. Add the marinated chicken and cook for about 5-7 minutes until browned and cooked through. Remove from skillet and set aside.
  2. In the same skillet, add the sliced bell pepper and onion. Cook for about 5 minutes until softened. Return the chicken to the skillet and stir to combine.
Assemble the Fajitas
  1. Warm the tortillas in a dry skillet or microwave. Serve the chicken and vegetable mixture in the tortillas with sour cream, shredded cheese, and guacamole.
