Ingredients
Scale
- 3–4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 1 cup salsa verde (store-bought or homemade)
- 1 cup low-sodium chicken broth
- 2 tsp olive oil
- ¼ cup chopped fresh cilantro
- Juice of 1 lime
- ½ tsp garlic powder
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat. Season chicken with salt, pepper, and garlic powder. Sear the chicken for about 5 minutes on each side until golden brown and cooked through.
- Remove the chicken from the skillet and set aside. In the same skillet, add rice and chicken broth; bring to a simmer. Cover tightly with a lid and cook for about 15-20 minutes until the rice absorbs most of the liquid.
- Stir in salsa verde and return the cooked chicken to the skillet. Add chopped cilantro and squeeze fresh lime juice over everything.
- Cook for an additional 5 minutes on medium heat until heated through and aromatic. Serve hot.
