Description

A vibrant Mediterranean-inspired pasta salad loaded with colorful vegetables and tossed in a zesty Italian dressing.


Ingredients

  • 1 pound rotini pasta
  • 2 cups cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red bell pepper, chopped
  • 1/2 red onion, thinly sliced
  • 1 cup black olives, sliced
  • 1 cup feta cheese, crumbled
  • 1/2 cup Italian dressing
  • Fresh basil leaves
  • Salt and pepper to taste

Instructions

  • Cook pasta according to package directions. Drain and cool under running water.
  • Combine pasta with vegetables and olives in a large bowl.
  • Add dressing, feta cheese, and torn basil leaves.
  • Toss well and season with salt and pepper.
  • Refrigerate for at least 30 minutes before serving.
