  • 4 tbsp unsalted butter, softened
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  • Preheat and prepare: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  • Make the batter: In a medium bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt. In a large bowl, cream butter and sugar until light and fluffy. Beat in the egg, vanilla, buttermilk, and red food coloring. Gradually add the dry ingredients, mixing until smooth.
  • Bake the cookies: Drop tablespoons of batter onto the prepared baking sheets, spacing them 2 inches apart. Bake for 10-12 minutes or until the cookies spring back when touched. Cool completely on wire racks.
  • Prepare the filling: Beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla extract, beating until fluffy.
  • Assemble the pies: Spread or pipe a generous amount of filling onto the flat side of one cookie and top with another cookie to create a sandwich. Repeat with the remaining cookies.
