  • 1/4 cup mayonnaise
  • 1 tsp yellow mustard
  • 3 drops red food coloring
  • 3 drops blue food coloring
  • 1/2 tsp paprika (smoked preferred)
  • 2 tbsp chives or green onions, finely chopped
  • Salt and pepper to taste

Instructions

  1. Hard boil the eggs by placing them in a pot of cold water, ensuring they are covered by at least an inch. Bring to a boil over medium heat. Once boiling, cover and remove from heat; let sit for 12 minutes.
  2. Drain hot water and cool eggs under cold water for easy peeling.
  3. Gently crack each egg and peel under running water.
  4. Slice each egg in half lengthwise and scoop out yolks into a bowl, keeping whites intact.
  5. Add mayonnaise, mustard, salt, and pepper to yolks; mash until smooth.
  6. Divide yolk mixture into two bowls; add red food coloring to one and blue to the other until desired shades are achieved.
  7. Fill each egg white half with either red or blue yolk mixture using piping bags or spoons.
  8. Sprinkle paprika on top of all filled eggs and garnish with chives or green onions.
