Ingredients

Scale
  • 2 pounds Yukon Gold potatoes
  • 6 slices thick-cut bacon

  • 1 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon sugar
  • Salt and pepper to taste

  4. Add cooled potatoes to the dressing mixture along with the crispy bacon and sautéed onions. Toss gently to combine without mashing the potatoes.
