A decadent layer cake inspired by turtle candies, featuring rich chocolate cake layers generously filled with homemade caramel, topped with chocolate ganache, and sprinkled with toasted pecans.
Ingredients

- 2 cups all-purpose flour
- 2 cups granulated sugar
- ¾ cup unsweetened cocoa powder
- 2 large eggs
- 1 cup milk
- ½ cup vegetable oil
- 2 teaspoons vanilla extract
- 1 cup hot coffee
- 1 cup caramel sauce
- 2 cups chocolate ganache
- 1½ cups toasted pecans, chopped
Instructions
- Preheat oven to 350°F (175°C). Grease and line two 9-inch cake pans.
- Mix dry ingredients. Add wet ingredients except coffee. Beat until smooth. Stir in hot coffee.
- Bake 25-30 minutes until done. Cool completely.
- Layer cakes with caramel between layers. Pour ganache over top and sides.
- Garnish with chopped pecans and drizzle with remaining caramel
Notes
- Coffee enhances chocolate flavor but won’t make cake taste like coffee
- Caramel sauce can be store-bought to save time
- Cake layers can be made ahead and frozen for up to 1 month
