Description

A decadent layer cake inspired by turtle candies, featuring rich chocolate cake layers generously filled with homemade caramel, topped with chocolate ganache, and sprinkled with toasted pecans.


Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 2 large eggs
  • 1 cup milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup hot coffee
  • 1 cup caramel sauce
  • 2 cups chocolate ganache
  • 1½ cups toasted pecans, chopped

Instructions

  • Preheat oven to 350°F (175°C). Grease and line two 9-inch cake pans.
  • Mix dry ingredients. Add wet ingredients except coffee. Beat until smooth. Stir in hot coffee.
  • Bake 25-30 minutes until done. Cool completely.
  • Layer cakes with caramel between layers. Pour ganache over top and sides.
  • Garnish with chopped pecans and drizzle with remaining caramel

Notes

  • Coffee enhances chocolate flavor but won’t make cake taste like coffee
  • Caramel sauce can be store-bought to save time
  • Cake layers can be made ahead and frozen for up to 1 month
