- 1 pound large shrimp, peeled and deveined
- 3 bell peppers (mixed colors), sliced
- 1 large onion, sliced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 lime, juiced
- 8 flour tortillas
- Salt and pepper to taste
Instructions
- Season shrimp with chili powder, cumin, salt, and pepper.
- Heat oil in a large skillet over high heat. Cook shrimp until pink, about 2-3 minutes.
- Remove shrimp; add peppers and onions to the same pan.
- Cook vegetables until tender-crisp, about 5-6 minutes.
- Return shrimp to pan, add garlic and lime juice, heat through.
