- 1 lb Italian sausage (mild or spicy)
- 1 medium onion, diced
- 2 garlic cloves, minced
- 2 medium carrots, sliced
- 2 celery stalks, sliced
- 1 zucchini, diced
- 1 cup green beans, trimmed
- 1 can (14 oz) diced tomatoes
- 4 cups chicken or vegetable broth
- 1 tsp dried Italian seasoning
- ½ tsp smoked paprika
- Salt and black pepper to taste
- 1 cup spinach or kale (optional)
- 2 tbsp olive oil
Instructions
- Cook Sausage: Heat olive oil in a large pot over medium heat. Add sausage and cook until browned, breaking it into crumbles. Remove and set aside.
- Sauté Aromatics: In the same pot, sauté onion, garlic, carrots, and celery until softened, about 5 minutes.
- Add Vegetables and Seasoning: Stir in zucchini, green beans, Italian seasoning, smoked paprika, salt, and pepper. Cook for 2 minutes.
- Simmer Soup: Add the diced tomatoes (with juice), broth, and cooked sausage. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add Greens: Stir in spinach or kale during the last 5 minutes of cooking if desired.
- Serve: Ladle into bowls and serve hot with crusty bread.
