Ingredients

  • 4 boneless, skinless chicken breasts
  • 16 oz jar of your favorite salsa
  • 1 packet taco seasoning
  • 1 cup shredded Mexican cheese blend
  • Fresh cilantro for garnish (optional)

Instructions

  • Place chicken breasts in the bottom of your slow cooker.
  • Sprinkle taco seasoning evenly over the chicken.
  • Pour salsa over the seasoned chicken, ensuring it’s well covered.
  • Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours until chicken is tender.
  • Shred chicken using two forks, then stir to combine with the sauce.
  • Sprinkle cheese on top, cover and cook for additional 5 minutes until melted.
  • Garnish with fresh cilantro if desired before serving.

Notes

  • For extra flavor, add a can of drained corn or black beans during the last hour of cooking
  • Serve over rice, in tacos, or with tortilla chips
