- 4 boneless, skinless chicken breasts
- 16 oz jar of your favorite salsa
- 1 packet taco seasoning
- 1 cup shredded Mexican cheese blend
- Fresh cilantro for garnish (optional)
Instructions
- Place chicken breasts in the bottom of your slow cooker.
- Sprinkle taco seasoning evenly over the chicken.
- Pour salsa over the seasoned chicken, ensuring it’s well covered.
- Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours until chicken is tender.
- Shred chicken using two forks, then stir to combine with the sauce.
- Sprinkle cheese on top, cover and cook for additional 5 minutes until melted.
- Garnish with fresh cilantro if desired before serving.
Notes
- For extra flavor, add a can of drained corn or black beans during the last hour of cooking
- Serve over rice, in tacos, or with tortilla chips
- Leftovers keep well in the refrigerator for up to 3 days
