- 8 cups popped popcorn (about 1/3 cup kernels)
- 1 cup mini marshmallows
- 1/2 cup honey or light corn syrup
- 1/2 cup peanut butter
- 1/4 cup butter
- 1 teaspoon vanilla extract
- Optional mix-ins: M&Ms, chopped nuts, or mini chocolate chips
Instructions
- Line a 9×13 inch baking pan with parchment paper and lightly grease it.
- Place popped popcorn in a large bowl, removing any unpopped kernels.
- In a medium saucepan, melt butter over medium heat. Add marshmallows, honey, and peanut butter, stirring until smooth.
- Remove from heat, stir in vanilla extract.
- Pour the mixture over popcorn and gently fold until evenly coated.
- Press mixture firmly into prepared pan. Sprinkle with optional mix-ins if using.
- Refrigerate for 30 minutes until set. Cut into bars.
Notes
- Store in an airtight container for up to 5 days
- For crispier bars, avoid overmixing the warm mixture with popcorn
- Can be frozen for up to 3 months
