Description

A delightful sweet and salty treat that transforms plain popcorn into an irresistible snack bar, perfect for parties or on-the-go snacking.


Ingredients

  • 8 cups popped popcorn (about 1/3 cup kernels)
  • 1 cup mini marshmallows
  • 1/2 cup honey or light corn syrup
  • 1/2 cup peanut butter
  • 1/4 cup butter
  • 1 teaspoon vanilla extract
  • Optional mix-ins: M&Ms, chopped nuts, or mini chocolate chips

Instructions

  • Line a 9×13 inch baking pan with parchment paper and lightly grease it.
  • Place popped popcorn in a large bowl, removing any unpopped kernels.
  • In a medium saucepan, melt butter over medium heat. Add marshmallows, honey, and peanut butter, stirring until smooth.
  • Remove from heat, stir in vanilla extract.
  • Pour the mixture over popcorn and gently fold until evenly coated.
  • Press mixture firmly into prepared pan. Sprinkle with optional mix-ins if using.
  • Refrigerate for 30 minutes until set. Cut into bars.

Notes

  • Store in an airtight container for up to 5 days
  • For crispier bars, avoid overmixing the warm mixture with popcorn
