- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 pound penne pasta
- 2 (24-ounce) jars marinara sauce
- 3 cups water
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 2 tablespoons Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium-high heat. Season chicken with salt, pepper, and 1 tablespoon Italian seasoning. Cook until golden brown, about 5-7 minutes.
- Add garlic and cook until fragrant, about 30 seconds. Add pasta, marinara sauce, water, and remaining Italian seasoning. Bring to a boil, then reduce heat and simmer, covered, stirring occasionally until pasta is tender, about 15-18 minutes.
- Top with both cheeses, cover, and cook until cheese melts, about 2-3 minutes. Let rest for 5 minutes before serving.
Notes
- For extra crispy topping, broil for 2-3 minutes after adding cheese
- Use freshly grated Parmesan for best flavor
- Adjust liquid as needed during cooking if pasta seems too dry
