  • 6 slices bacon, chopped
  • 1½ cups shredded cheddar cheese
  • 3 green onions, sliced

  • Salt and pepper to taste

Instructions

  • Heat olive oil in a large skillet over medium-high heat. Add diced potatoes, season with salt and pepper, and cook until golden and crispy (about 15 minutes), stirring occasionally.
  • Add garlic and broccoli to the pan, cook for 5-7 minutes until broccoli is tender-crisp.
  • Meanwhile, cook chopped bacon in a separate pan until crispy. Drain on paper towels.
