- 2 cups fresh broccoli florets
- 6 slices bacon, chopped
- 1½ cups shredded cheddar cheese
- 3 green onions, sliced
- 3 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add diced potatoes, season with salt and pepper, and cook until golden and crispy (about 15 minutes), stirring occasionally.
- Add garlic and broccoli to the pan, cook for 5-7 minutes until broccoli is tender-crisp.
- Meanwhile, cook chopped bacon in a separate pan until crispy. Drain on paper towels.
- Top potato-broccoli mixture with cheese, , and green onions. Cover and cook 2-3 minutes until cheese melts.
