Instructions
- Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish.
- Thinly slice sweet potatoes into even rounds, about 1/8 inch thick.
- In a bowl, whisk together heavy cream, minced garlic, thyme, salt, and pepper.
- Layer half of the sweet potato slices in the baking dish. Pour half of the cream mixture over them and sprinkle with half of the cheese. Repeat with remaining ingredients.
- Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 20-30 minutes until bubbly and golden on top.
