Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. Thinly slice sweet potatoes into even rounds, about 1/8 inch thick.
  3. In a bowl, whisk together heavy cream, minced garlic, thyme, salt, and pepper.
  4. Layer half of the sweet potato slices in the baking dish. Pour half of the cream mixture over them and sprinkle with half of the cheese. Repeat with remaining ingredients.
  5. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 20-30 minutes until bubbly and golden on top.
