Ingredients

Scale
  • 34 boneless, skinless chicken breasts
  • 2 ripe peaches, sliced into wedges
  • 2 sprigs fresh rosemary
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 cup dry white wine
  • 1 cup low-sodium chicken broth
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare by dicing the onion and garlic and slicing the peaches.
  2. Heat olive oil in a skillet over medium-high heat. Season chicken with salt and pepper and sear for 5-6 minutes on each side until golden brown. Remove chicken from the skillet.
  3. In the same pan, sauté onions and garlic until translucent.
  4. Deglaze the pan with white wine, scraping up bits stuck to the bottom. Simmer for 2-3 minutes, then add chicken broth.
  5. Return the chicken and add peach wedges along with rosemary. Simmer for an additional 10-15 minutes until cooked through.
