  • 2 medium eggplants, halved lengthwise
  • 3 tbsp white or yellow miso paste
  • 1 tbsp honey or maple syrup
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 3 garlic cloves, minced
  • 2 green onions, thinly sliced for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Slice eggplants in half lengthwise and scoop out some flesh if desired.
  3. In a bowl, mix miso paste, honey or maple syrup, soy sauce, sesame oil, and minced garlic until smooth.
  4. Brush the miso glaze generously over the cut sides of the eggplants.
  5. Place on a baking sheet lined with parchment paper, cut-side up.
  6. Bake for 25-30 minutes until tender and caramelized.
  7. Garnish with sliced green onions before serving.
