  • 4 green onions (finely chopped)
  • 1 cup shredded carrots
  • 1 cup frozen peas
  • 3 large eggs
  • 3 tbsp low-sodium soy sauce
  • 1 tsp sesame oil
  • 2 cloves garlic (minced)
  • Optional: 1 cup cooked chicken or tofu

Instructions

  1. Gather and chop all ingredients: finely chop green onions, shred carrots, and drain pineapple.
  2. In a large skillet over medium heat, scramble the eggs in a bit of oil until golden. Set aside.
  3. In the same skillet, sauté minced garlic for about 30 seconds before adding shredded carrots and peas. Cook until softened (about 3 minutes).
  4. Stir in jasmine rice and pineapple chunks; stir-fry for about 5 minutes until heated through.
  5. Add soy sauce and sesame oil; mix well and adjust seasoning.
  6. Fold in scrambled eggs and green onions, stir to combine for another 2 minutes.
