  • 2 large sweet onions (Vidalia or Walla Walla), sliced
  • 2 cups low-sodium beef broth
  • 1 tbsp fresh thyme leaves
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 cup Gruyère cheese, shredded
  • 4 slices baguette, toasted

Instructions

  1. Season the chuck roast generously with salt and pepper.
  2. In a large pot, heat olive oil over medium-high heat and sear the roast on all sides until golden brown (about 5 minutes per side). Remove from pot.
  3. Add sliced onions to the pot and sauté until translucent and slightly caramelized (about 10 minutes).
  4. Stir in beef broth and fresh thyme, scraping any browned bits from the bottom of the pot.
  5. Return the roast to the pot, cover tightly, and simmer on low for 3-4 hours until fork-tender.
  6. About 15 minutes before serving, top the roast with toasted baguette slices and sprinkle with Gruyère cheese. Cover until cheese melts.
