Ingredients

Scale
  • 4 medium Yukon Gold potatoes (about 1.5 lbs), peeled and cut into 1-inch thick rounds
  • 4 tbsp unsalted butter
  • 1 cup low-sodium vegetable stock
  • 4 sprigs fresh thyme
  • 2 garlic cloves, crushed
  • Salt and pepper to taste

Instructions

  1. Preheat a large skillet over medium heat and melt 2 tablespoons of butter until foamy.
  2. Sear the potato rounds cut side down for about 5 minutes until golden brown, then flip them over.
  3. Add crushed garlic and thyme around the potatoes, then pour the vegetable stock until it reaches halfway up each potato round.
  4. Reduce heat to low, cover, and let simmer for 20-25 minutes until tender but not falling apart.
  5. Remove the lid, increase heat slightly to evaporate remaining liquid while browning for about 5 minutes.
  6. Drizzle with remaining melted butter before serving and garnish with fresh thyme if desired.
