  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup peanuts, roughly chopped
  • 2 tbsp tamarind paste
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp brown sugar
  • 1 tsp chili paste or Sriracha (adjust to taste)

Instructions

  1. Prep all ingredients by slicing the chicken and chopping veggies.
  2. Heat oil in a large skillet over medium-high heat. Add chicken and cook until golden brown (5-7 minutes).
  3. Push chicken aside and scramble eggs on the other side until fully cooked; mix with chicken.
  4. Add bell peppers and green onions; stir-fry for another 3-4 minutes.
  5. In a small bowl, whisk tamarind paste, soy sauce, brown sugar, and chili paste; pour over stir-fried ingredients.
  6. Add cooked rice noodles to the skillet and toss gently to coat with sauce.
