  • 24 ladyfingers
  • 16 oz mascarpone cheese
  • 4 large eggs, separated
  • 1 cup strong brewed coffee, cooled
  • 1/3 cup amaretto liqueur
  • 1/2 cup sugar, divided
  • 2 cups fresh or frozen cherries, pitted
  • Cocoa powder for dusting
  • Dark chocolate shavings for garnish

Instructions

  • Make cherry compote: Simmer cherries with 2 tablespoons sugar until softened. Cool completely.
  • Mix cooled coffee with 3 tablespoons amaretto in a shallow dish.
  • Beat egg yolks with 1/4 cup sugar until pale. Fold in mascarpone and remaining amaretto.
  • Whip egg whites with remaining sugar until stiff peaks form. Gently fold into mascarpone mixture.
  • Quickly dip ladyfingers in coffee mixture and layer in 9×13 dish. Top with half the mascarpone mixture and cherry compote. Repeat layers.
  • Refrigerate 4 hours or overnight. Dust with cocoa powder and garnish with chocolate shavings before serving.

Notes

  • For a non-alcoholic version, replace amaretto with almond extract
  • Use pasteurized eggs if concerned about raw eggs
  • Can be made up to 2 days ahead
